Description
1 lb. butter and enough spry to make 2 cups
½ tsp vanilla crystal
2 cups sugar
5-6 cups flour (Marie uses 4 cups flour)
2 egg yolks
To remove salt and water from butter, melt butter in double boiler or on very low fire. Then cool. Remove the top foam which is the salt, and take the hardened butter leaving the water at the bottom. Mix with powdered sugar—spray sugar on wax paper.
Cream butter thoroughly, add sugar and mix well. Then gradually add flour until mixture becomes pliable. Roll into desired shape. Bake in slow oven (300°) for about 25 or 30 minutes. Make about 100 cookies.
