Description
Filling
1 cup chopped, dried apricots
¼ cup brown sugar
1 cup water
1 tsp lemon juice
Crumb Base: Topping
1 ¼ cup sifted flour
¼ tsp salt
½ tsp baking soda
⅓ brown sugar
1 cup Quaker 100% cereal
1/3 cup melted butter or margarine
For filling: Combine all ingredients in saucepan. Cook over low heat until thick. Stir often, cool.
For crumb base and topping: sift together flour, salt, and soda. Stir in sugar and 100% cereal. Add butter, mixing until crumbly. Press 2/3 of crumb mixture into greased 8ʺ square baking pan. Spread with filling. Sprinkle remaining crumb mixture evenly over filling and pack lightly. Bake 350° for 25-30 min. Cool, cut into squares.
