1/2 cup bulghur (cracked wheat)
3 medium size tomatoes diced
1/2 cup chopped parsley
1/4 cup chopped green onions
2 tbsp. chopped fresh mint
2 tbsp olive or salad oil
2 tbsp lemon juice
1/2 tsp. salt
1/4 tsp. ground allspice
1/4 tsp. pepper
In a large bowl stir bulghur with 2 cups cold water. Let stand 1 1/2 hrs. Drain bulghur well. Add tomatoes & remaining ingredients. Mix well. Cover & refrigerate at least 1 hr.
