Greece Cookies
Description
1 cup butter¾ cup honey
Juice of small orange
½ tsp vanilla
3 cups and 2 tablespoon flour
½ tsp baking soda
1 tsp baking powder
Cream butter and honey until almost white. Add orange juice and vanilla. Sift dry ingredients together. Add to creamed mixture gradually. Blend well, chill in refrigerator at least 1 hour. Roll out about ¼ inch thick of lightly floured board. Cut into any shapes desired. Baked on cookie sheet in moderate 350-degree oven until browned, about 10 minutes. Make about 6 dozen cookies. After the cookies are baked, the Greek cook makes a sirup of 2 cups sugar 1 cup honey 1 ½ cup water. Boiling until sirup comes to soft ball stage. She dips the cookies into the sirups and sprinkles them with chopped nuts while still damp. Cookies are then dried on a rack and stored between layers of wax paper.
