Eggplant Delight - Recipe from the kitchen of Florence Ashjian, Fresno.
Description
1 large eggplant, unpared1 cup grated jack cheese
1 egg
Sliced tomatoes (about 1/8-inch-thick slices)
Green pepper rings,
¼ inch thick
Salad oil
Chopped parsley
Salt and pepper
Celery salt
Garlic salt
Mix grated cheese, egg and parsley together. Wash and slice eggplant into round slices about ¼ inch thick. Arrange eggplant slices in an oiled flat sheet pan. Sprinkle with salt and pepper, celery salt and garlic salt. Place under broiler and broil eggplant on one side. Turn broiled side over and on unbroiled side, put pepper rings to make a ridge. Place heaping tablespoon of cheese mixture in center of pepper ring and spread. Place one thin slice tomato on each eggplant slice. Bake at 350 degrees for 20 to 25 minutes or until eggplant is tender.
This dish can be served hot or cold.
