Description
How to make itch (makes 2 servings)
Ingredients:
1 large onion chopped into small pieces
1 green pepper chopped into small pieces
1 red pepper chopped into small pieces
1 large tomato chopped
8 oz. of tomato sauce
1 cup #1 bulgar (small size)
½ cup of chopped parsley
½ cup of chopped scallion
1 tsp of Armenian red pepper (to taste)
1 tsp salt (to taste)
Juice of 1 fresh lemon
1/3 cup extra virgin olive oil
1 tblsp red pepper paste (optional)
Rinse the bulgar and drain it very well Add ¼ tsp salt and set aside Sauté the onion and both peppers in extra virgin olive oil for 2 or 3 min. Add the tomato and sauté for 1 more min. Add the tomato sauce, Armenian red pepper, lemon juice and the pepper paste and simmer for 1 more min. Add ½ tsp of salt and taste for seasoning, if needed add the other ½ tsp of salt Turn off the heat, add the bulgar and mix it very well with a wooden spoon Transfer to a serving dish, and when it's cool sprinkle the top with parsley and scallion Serve cool or at room temperature
