Description
1 cup barley (zteztug)
1 cup pea beans
2 qts water
Boil slowly, ½ to ¾ of an hour. Drain and add (the same amount of) fresh water, add ½ cup of yellow split lentils. Boil for ½ hr. longer and add 2 large onions and lentils or 1 c. vosp. Cook for ½ hour more. Sauté 1 onion and pour on top -add chopped spinach. Add 1 cup vosp (cooked lentils) before chopped spinach. DO NOT STIR. Mix vosp, lentils and onions, add spinach last.
Editor's Note: Perper is the Armenian word for purslane, a very common and nutritous weed that grows everywhere it seems. In this particular recipe, it may also be exchanged for spinach.
