1 qt. milk
¾ cup rice
½ cup sugar
1 pinch of salt
Wash and cook the rice in one cup of boiling water until water is absorbed. Heat the milk, add the rice and cook on low fire for 45 minutes, stirring frequently. Add sugar and salt and cook 15 minutes more, always stirring. Pour into individual dishes and cool. Sprinkle with cinnamon. Serves 8.
