Description
2 persimmons, very ripe
1/4 lb. butter
1 egg
3/4 cup sugar
1/4 cup brown sugar
2 cups flour, sifted
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1 cup walnuts, chopped
1/2 cup raisins or may add 1/2 cup chocolate chips
1. Peel persimmons, discard skins. Mash fruit
to pulp. Should yield 1 cup.
2. Cream together the butter, egg + sugars until
light + fluffy. Add persimmon, blend.
3. Add flour, baking soda + seasonings. Mix
until batter is light. Add walnuts + raisins,
mixing with spoon to blend.
4. Drop by spoonfuls on greased cookie sheet.
Bake 350° for 20 min. until cookies are lightly
browned.
Yield about 6 doz. cookies.
