Chicken Picante
Description
6 skinless chicken breast halves½ c. medium chunky taco sauce (salsa)
¼ c. dijon mustard
2 Tbsp. fresh lime juice
2 Tbsp. butter or margarine
6 Tbsp. plain yogurt, divided
1 lime sliced into 6 segments
(membrane removed)
In large bowl, make marinade by mixing taco sauce, mustard, and lime juice.
Add chicken, turning to coat. Marinate at least 30 min.
In large frying pan, place butter and melt over medium heat until foamy.
Remove chicken from marinade and place in the frying pan. Cook, turning, about 10 min. or until brown on all sides. Add marinade and cook for 5 min. more, until fork can be inserted in the chicken with ease and marinade is slightly reduced.
Remove chicken to a serving platter. Boil marinade for 1min. Pour over chicken.
Place one Tbsp yogurt on each half or serve separately. Top with lime pieces.
