Chicken Lombardy
Description
8 oz mushroom sliced2 Tbsp butter melted
6 c. breasts
½ c. flour
⅓ c butter
¾ Marsala wine
½ c chicken broth
½ tsp salt
⅛ tsp pepper
½ c. shredded mozzarella
½ c. parmesan cheese
2 green onions chopped
Cook mushrooms in butter until tender- set aside.
Cut breasts in half lengthwise.
Place chicken between 2 sheets of plastic wrap and flatten to 1/8". Dredge chicken in flour.
Cook in batches in 1-2 Tbsp butter 3-4 minutes each side.
Place chicken in lightly greased 13x9 baking dish, overlapping edges. Rescue pan drippings in skillet- sprinkle mushrooms over top.
Add wine and broth to skillet. Bring to boil- reduce heat. Simmer uncovered for 10 minutes. Stir in salt and pepper. Pour sauce over chicken. Combine cheese and green onions. Sprinkle over chicken.
Bake uncovered 450° 12-15 min - until cheese melts.
