Description
1-1/2 lbs. (about 1-1/2 bunches) spinach
1 medium sized white onion thinly sliced
2 hard-cooked eggs, coarsely chopped
1 jar pimento strips, drained
3 slices crisply fried bacon, crumbled
Dressing:
In a jar or small bowl combine:
1 tsp. sugar
3/4 tsp. salt
1/4 tsp. paprika
1/8 tsp. pepper
1/2 cup salad oil
3 Tbsp. vinegar.
Shake until well mixed. Allow to stand an hour or more to blend flavors.
