26 lbs of meat or 25 lbs 1 ½ or 2 cup cuminas 1 cup salt 1 ½ cup allspice Paprika 1 cup or a little more Black pepper 1 cup to taste if desired a little hot 2 tablespoon cayenne peppers if desired hotter you can put a little more.
Knead well together and let it stand overnight. Knead the next morning and put in bags and use a rolling pin to make it flat and firm.
