This was a first time I made khoorabia, and I tried it with King Arthur's gluten free flour. It worked out well, however I would suggest refrigerating the cookies on the tray for a half an hour before cooking, maybe even freezing a few to see how might make a difference. The dough gets very malleable when warm because of the butter, and tends to spread on the cookie sheet when baking if to warm. The mistake I made was baking at 350. The right temperature is 300. Make sure to pull them out before browning on top. If you eat them out of the oven, they will crumble in your hands. If you wait until cooling, they should be fine. Enjoy.
