½ lb. filo dough
¼ cup margarine or butter
½ cup finely chopped onion
3 10 oz. pgs. Spinach well-drained and cooked
3 eggs
½ lb. feta, crumbled
¼ cup parsley
1 ½ tsp.dill
1 tsp.salt
1/8 tsp pepper
¾ cup melted margarine or butter
Preheat oven to 350 degrees
Sauté onion in melted butter or marg. about 5 minutes. Add spinach, remove from heat. Beat eggs with wooden spoon. Stir in cheese, parsley dill, salt, pepper, and spinach mixture. Brush butter on 13”x9” pan. Layer 8 Filo dough leaves buttering each. Spread spinach mixture evenly. Cover with 8 more Filo dough leaves. Pour remaining butter on top. Cut into rectangles 18, 3”x2” pieces. Bake for 30-35 mins., or till top crust is puffy and golden. Serves 18
