Description
2 ½ c. flour
½ tsp. baking powder
2 tsp. baking soda
Dash salt
8 oz. walnuts, chopped
½ c. crystal ginger, chopped
8 oz. apricots, chopped
4 oz. pineapple, drained and chopped
2 c. yogurt
½ c. sugar (may be omitted)
1. Preheat oven to 350 degrees.
2. Sift flour and salt in a large bowl. Add walnuts, ginger, apricots, and sugar to flour. Make a well in the center- pour the pineapple and yogurt and stir gently till blended.
3. Butter and flour, 9x 9x 1 3/4” pan and bake 45 minutes or till knife in middle comes out clean. Cool on rack 10 min. Unmold and cool. Chill before slicing.
