Pecan Rolls

400 oven, 25-30 minsMakes 12 rolls
¼ cup butter
1 tsp salt
1 cup milk (scalded)
1 compressed yeast
¼ cup sugar
1 whole egg
1 egg yolk beaten
3 cups flour (sifted)
¾ cup br. sugar
½ cup pecans
1 egg white for top (beat until frothy, brush on top)
1. Add short (butter) and salt to milk – cool to lukewarm
2. Mix yeast and sugar
3. Add to lukewarm milk and let stand for 5 mins
4. Add beaten eggs
5. Add flour and beat thoroughly
6. Knead on floured board
7. Place in greased bowl, let rise.
8. Roll dough ¼ inch thick. Brush with melted butter about ¼ cup
9. Sprinkle with 2 tbsp. of brown sugar and 1/8 tsp of cinnamon, roll up like a jelly roll, and cut in 1-inch pieces. Melt butter, ¼ cup in pan- sprinkle a cup of brown sugar over bottom, sprinkle pecans.
Place roll down on cut side, let rise 40 mins.
10, Brush beaten egg whites on top of rolls.
