Description
½ cup sugar
3 tbsp. flour
½ tsp cinnamon
¼ tsp salt
6 large ripe peaches (2 ½ lbs.)
1 tbsp. lemon juice
¼ tsp almond extract
1. Combine flour, cinnamon and salt.
2. Drop peaches in boiling water for 15 seconds, peel and slice in large bowl- sprinkle lemon juice, almond extract, add sugar mixture gently.
3. Make a lattice pie crust, fit bottom and add filling- make 10 strips-make a stand-up flute edge.
Bake at 450° for 15 mins and then bake @ 350 for 35 mins.
Makes a 9-inch pie.
