Description
1 lb. lentils
1 large onion, chopped fine
1 bunch parsley, chopped fine
1/4 cup olive oil
1 stick butter
1 cup bulghur
salt + pepper to taste
1 tsp. red pepper
Boil lentils 30 mins. in the water (will look pasty). Add salt + regular pepper and additional water if needed, + boil 2 mins. longer.
Put bulghur in a large bowl + pour lentils over it. Mix, cover + let cool.
Brown the onion in the melted butter + olive oil + add to the bulghur/lentil mixture. Mix in the chopped vegetables + add red pepper to taste.
Knead lightly for a few minutes + shape into individual servings by squeezing a portion against the palm of your hand gently with your fingers.
Serve warm or cold with more chopped onions + parsley if you like.
