Gatnabour (hand written)
1 qt Milk
¾ cup rice
½ cup sugar
Pinch of salt
Directions:
Wash rice. Cook in one cup of boiling water until water absorbed.
Add cooked rice to warm milk. Cook on low for 40 min stirring frequently- add salt and sugar. Cook 15 min. Continue stirring. Pour into bowl sprinkle with cinnamon

1 quart milk (4 cups)
½ cup rice
¼ cup sugar
A pinch of salt
(Unreadable, so add to taste) raisins
Wash and cook rice in one cup of boiling water until water is absorbed. Heat the milk, add the rice and cook on low fire for 45 minutes, stirring frequently. Add the sugar and salt and cook 15 minutes more, always stirring. Pour into individual dishes and cool. Sprinkle with cinnamon. Serves 8. Heat 5 minutes and add raisins
Pyrex saucepan is best for cooking milk puddings.
