Description
1 cup rice
2 cups water or broth
When the above comes to a boil, turn down to simmer and add 1/4 cube butter.
Cook 5 minutes.
Cut up 1 lb. yellow squash into cubes. Add to rice, cook until water is absorbed. Let set.
Saute onion in a little oil. Pour over before serving.
