Cracked Wheat Salad (Tabbouleh)
Description
1 cup fine bulgur, soaked in cold water for 1/2 hr. (squeeze out water)1 medium onion. chopped fine
1-1/2 cups fresh parsley, chopped fine
1/4 cup fresh mint, chopped fine
1/4 cup olive oil
1/4 cup lemon juice
2 medium tomatoes, chopped
1 small green pepper, sliced into rings
1. Combine bulgur, onion (or green onions),
parsley and mint in a bowl.
2. Sprinkle with olive oil, lemon juice
and salt.
3. Taste and chill in refrigerator.
4. Serve on a lettuce bed with tomatoes +
peppers.
Vinaigrette (1/2 cup)
1 tsp. salt
1/4 tsp. ground pepper
2 Tbsp. wine vinegar
1/2 cup oil
1) Garlic - pound half a garlic clove to
salt + pepper before adding vinegar.
2) Add 2 Tbsp. of cooked, reduced, pureed tomatoes to prepared vinaigrette.
