1 cup orange juice
1 cup crushed canned pineapple drained (reserve juice)
2 packages (3 oz. each) lemon gelatin
1/2 tsp. salt
2 Tbsp. lemon juice
2 cups grated raw carrot
Add water to pineapple juice to make 3-1/2 cups
liquid. Add orange juice & heat to boiling.
Dissolve gelatin in hot liquid. Add salt & lemon
juice. Cool. Add carrots & pineapple and pour
into wet 6-cup mold. Refrigerate until firm.
Unmold on lettuce leaves. Fill center with
mayonnaise & sour cream mixed in equal parts.
