Peda Bread (Melting Pot Cook Book)
Description
(Round Armenian Bread)1/2 cup lukewarm water (110° to 115°)
2 packages active dry yeast
2 tsp. plus 2 T. sugar
6 cups flour
1-3/4 cups lukewarm milk
4 to 5 Tbsp. olive oil
2 Tbsp. unsalted butter, softened
1 egg yolk beaten with 1 Tbsp. water
4 Tbsp. white sesame seeds
After dissolving yeast with 2 t. sugar and letting
it rise for 10 minutes in oven get ready for next steps.
Place 5-1/2 cups of flour in large bowl and add remaining
2 T. sugar & salt. Make well in center & pour in the
yeast mixture, lukewarm milk and 3 T. of the olive oil.
Make 2 balls & flatten on buttered cookie sheet,
1-1/2 inches thick and measuring 8 inches in diameter.
Brush with olive oil. Let rise double. Brush with egg
yolk mixture & sprinkle with sesame seeds. Bake 30-35 mins.
