Description
1 1/2 qt strawberries
1/2 cup water
1 cup sugar
3 T cornstarch
1 T butter
Red food coloring
Baked pastry shell
sweetened, flavored whipped cream
1. Wash, drain, and hull berries. Crush 2 c berries and combine with water, sugar and cornstarch in a sauce pan. Bring mixture to boiling point and cook over simmer flame about 2 min. or until clear.
2. Add butter and food coloring (opt) strain (opt) and cool slightly.
3. Fill baked and cooled pastry shell with remaining qt. of berries. Spoon strawberry glaze over berries, making sure that all are covered. Chill. Just before serving top with sweetened flavored whipped cream.
