Description
¾ cup flour
¼ teasp baking powder
¼ teasp baking soda
½ teasp salt
¾ cup brown sugar
2 cups dates, seedless but whole
1 ½ cups apricots, whole
2 cups walnuts, do not chop
3 eggs
1 teasp vanilla
Sift together flour, baking powder, baking soda and salt. Add brown sugar. Coat the fruit & nuts in the flour mixture. Beat until foamy, eggs & vanilla and blend into flour mixture. Line a ring or loaf pan with foil. Pour mixture into prepared pan and bake at 325° degrees for 1 hour. (Cake will not rise). Cool. Slice diagonally with a very sharp knife.
Lift out foil with cake. Slice as needed.
