Description
2. cups sifted flour (I never sift)
1 cup sugar
1 ½ teaspoon baking powder
½ teaspoon soda (baking)
1 teaspoon salt
¼ cup margarine
¾ cup orange juice
1 Tablespoon orange rind (I forgot this this time! Sorry)
1 egg well beaten
½ cup chopped walnuts
1 cup coarsely chopped cranberries (I ran ⅓ lb. through coarsest meat chopper)
Sift together flour, sugar, baking powder, soda, & salt. Cut in shortening until mixture resembles coarse cornmeal. Combine orange juice & rind & egg & pour all at once into dry ingredients, mixing just enough to dampen. Fold in nuts & cranberries & pour into greased loaf pan. Bake 350° about 1 hour. Remove from pan. Cool. Store overnight.
