Falafel
Description
Falafel
1 cup fava beans
1 cup chick peas
Water
1 medium sized onion
2 or 3 cloves garlic
1/2 cup minced parsley
1 tsp. red hot pepper
1 tsp. ground coriander
1/2 tsp. ground cumin
1 tsp. baking soda
Salt and ground pepper to taste
NOTE: After soaking beans and peas, remove loose skins.
Soak fava beans and chick peas in hot water for one hour. Drain and repeat process another 3 times.
Place beans, chick peas, onion, garlic, pepper, salt, red pepper, parsley into a bowl. Add all remaining spices and mix well. All ingredients must be well blended, almost like a paste. Use hand kneading if necessary.
Roll into small balls or flatten into patties (about 1 to 1 ½”). Drop into 1 inch of hot oil and fry until light brown.
Serve with pita bread and a bed of vegetables and Tahini sauce.
Salad
1/2 lettuce shredded
2 medium tomatoes cut in small cubes
1 onion chopped, or scallion dressing
2 Tblsp. tahini
3 Tblsp. lemon juice
Salt to taste
Blend dressing and sprinkle over tossed salad and serve with Falafel either on the side, or dip Falafel into salad mixture.
