Chocolate Chip Date Cake
Description
1 ¼ c. water8 oz. fresh dates, chopped (1 ½ cups)
1 ¼ tsp. baking soda
1 cup sugar
¾ c. butter, softened
2 eggs
1 ¼ c. sifted flour
½ tsp. salt
1 tsp. vanilla
½ cup oatmeal
1 12 oz. pkg. mini choc. chips
1 Tbs. sugar
¾ walnuts
Simmer water, dates, and 1 tsp. soda in a small pan for ten min. Set aside to cool.
In a large bowl, cream 1 cups sugar and butter till fluffy. Blend in eggs 1 at a time, beating after each addition.
Sift flour, ¼ tsp. soda and salt. Blend flour mixture into the creamed mixture. Stir in dates w/liquid, vanilla, oatmeal, and ½ choc. chips. Spread batter into greased and floured 9” x 13” pan. Mix rest of choc chips, 1 tbsp. sugar and nuts and sprinkle over top. Bake at 350 degrees for 35 min. Cool in pan. Serve warm or cool in 2” squares.
